- Preheat oven to 400°F (200°C). Lightly brush cod fillets with half the olive oil and sprinkle with dried thyme, salt, and pepper.
- Arrange sweet potato slices in a single layer on a baking sheet lined with parchment paper. Drizzle with remaining olive oil and season with a pinch of salt and pepper.
- Place cod fillets on the baking sheet alongside sweet potatoes. Bake for 15-20 minutes until fish is opaque and sweet potatoes are tender.
- While baking, place broccoli florets in a steamer basket over 1/4 cup water. Cover and steam for 5-7 minutes until bright green and tender-crisp.
- Serve baked cod with sweet potatoes and steamed broccoli warm.
