Ingredients
  

  • 2 fillets cod fillets about 4 oz each, skin removed
  • 1 large sweet potato peeled and sliced into 1/4-inch rounds
  • 1.5 cups broccoli florets fresh or frozen
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon dried thyme
  • to taste salt and black pepper
  • 0.25 cup water for steaming broccoli

Method
 

  1. Preheat oven to 400°F (200°C). Lightly brush cod fillets with half the olive oil and sprinkle with dried thyme, salt, and pepper.
  2. Arrange sweet potato slices in a single layer on a baking sheet lined with parchment paper. Drizzle with remaining olive oil and season with a pinch of salt and pepper.
  3. Place cod fillets on the baking sheet alongside sweet potatoes. Bake for 15-20 minutes until fish is opaque and sweet potatoes are tender.
  4. While baking, place broccoli florets in a steamer basket over 1/4 cup water. Cover and steam for 5-7 minutes until bright green and tender-crisp.
  5. Serve baked cod with sweet potatoes and steamed broccoli warm.
