Ingredients
  

  • 4 cups fresh spinach leaves washed and trimmed
  • 1 medium ripe avocado peeled and pitted
  • 1 small yellow onion chopped finely
  • 2 cups low-sodium vegetable broth
  • 1 clove garlic minced
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon ground black pepper or to taste
  • 0.25 teaspoon sea salt or to taste

Method
 

  1. Heat olive oil in a medium pot over medium heat. Add chopped onion and minced garlic and sauté until soft and fragrant, about 5 minutes.
  2. Add the fresh spinach leaves to the pot and cook, stirring frequently, until wilted, about 3 minutes.
  3. Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat and simmer for 7 minutes.
  4. Remove the pot from heat. Add the ripe avocado to the pot. Use an immersion blender to puree the soup until very smooth. Alternatively, carefully transfer soup in batches to a blender and puree.
  5. Season the soup with sea salt and ground black pepper to taste. Stir well and serve warm.
