Ingredients

  • 1 large whole wheat tortilla soft, fresh
  • 1/2 medium ripe avocado peeled and pitted
  • 1 cup fresh spinach leaves washed
  • 1 tbsp plain Greek yogurt adds creaminess
  • 1/2 tsp lemon juice freshly squeezed

Instructions

  • In a bowl, mash avocado with Greek yogurt and lemon juice until smooth. Season lightly with salt and pepper if desired.
  • Warm the tortilla in a pan over low heat for about 1-2 minutes until pliable. Spread the avocado mixture evenly over the tortilla, then layer fresh spinach leaves on top.
  • Roll the tortilla gently to enclose the filling, slice in half if desired, and serve immediately.
