  • 2 tbsp olive oil extra virgin
  • 1 clove garlic minced
  • 60 ml vegetable broth low sodium
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp salt optional; adjust to preference

Method
 

  1. Steam the cauliflower florets until very soft, about 8-10 minutes.
  2. In a small pan, warm olive oil over low heat and gently sauté minced garlic for 1-2 minutes until fragrant, being careful not to brown.
  3. Combine steamed cauliflower, white beans, sautéed garlic and olive oil, vegetable broth, salt, and black pepper in a blender or food processor.
  4. Blend until smooth and creamy, adding more broth if needed to reach a soft, mashable consistency.
  5. Serve warm as a gentle-textured side dish that supports brain health.
