Ingredients
  

  • 2 tbsp extra virgin olive oil for cooking

  • 1 cup kale chopped, washed
  • 1 cup spinach fresh
  • 1/2 cup red bell pepper sliced thin
  • 1/2 cup fresh blueberries for garnish
  • 1/4 cup walnuts chopped, toasted
  • 1/2 tsp ground black pepper
  • 1/4 tsp sea salt or to taste

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add the chopped kale, spinach, and sliced red bell pepper to the skillet.
  4. Cook, stirring occasionally, for about 6-8 minutes until vegetables are tender but still vibrant.
  5. Season with sea salt and black pepper to taste, then remove from heat.
  6. Serve warm, garnished with fresh blueberries and toasted walnuts for added brain-healthy nutrients and texture.
