Ingredients
  

  • 1 tablespoon extra virgin olive oil for sautéing
  • 2 cloves garlic minced
  • 1 cup canned chickpeas drained and rinsed
  • 4 cups fresh spinach washed and roughly chopped
  • 0.5 teaspoon ground turmeric adds color and antioxidants
  • 0.25 teaspoon black pepper freshly ground
  • 0.5 teaspoon dried oregano for Mediterranean flavor
  • 0.5 lemon lemon juice freshly squeezed
  • 1 pinch sea salt to taste

Method
 

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add chickpeas, turmeric, black pepper, and oregano. Stir and cook for 3-4 minutes to warm through and blend flavors.
  4. Add spinach in batches, stirring until wilted before adding more. Cook about 5-6 minutes until spinach is tender and reduced.
  5. Remove from heat. Stir in lemon juice and season with salt to taste.
  6. Serve warm as a satisfying dinner or alongside whole grain bread for extra fiber.
