Ingredients
 
 

  • 4 large eggs preferably free-range
  • 1 cup fresh spinach chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup onion finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup reduced-fat feta cheese crumbled, optional
  • to taste black pepper freshly ground

Method
 

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add chopped onion and sauté for 2-3 minutes until softened.
  3. Add spinach and cherry tomatoes to the skillet; cook for another 2 minutes until spinach wilts.
  4. In a bowl, whisk the eggs lightly with a pinch of black pepper.
  5. Pour the eggs evenly over the vegetables in the skillet. Cook over medium-low heat until eggs are set, about 5 minutes.
  6. Sprinkle crumbled feta cheese on top if using, then gently fold the omelette and cook for another minute.
  7. Slide the omelette onto plates and serve warm.
