  • 4 cups mixed leafy greens such as spinach and kale, chopped

  • 1 medium red bell pepper deseeded and diced
  • 1/2 cup cucumber peeled and diced
  • 1/4 cup extra virgin olive oil for dressing
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 teaspoon sea salt or to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

  1. In a large bowl, combine the mixed leafy greens, diced red bell pepper, and cucumber.
  2. Add the chopped walnuts to the bowl and gently toss to mix.
  3. In a small bowl, whisk together the olive oil, lemon juice, sea salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad and toss gently until everything is evenly coated.
  5. Serve immediately or chill briefly before serving.
