Ingredients
  

  • 4 cups fresh spinach leaves washed and trimmed
  • 1/4 cup walnuts lightly toasted, chopped
  • 1/2 cup fresh blueberries rinsed
  • 1/4 cup crumbled feta cheese optional for extra flavor
  • 2 tbsp extra virgin olive oil for dressing
  • 1 tbsp fresh lemon juice for dressing
  • 1/2 tsp honey optional, to balance acidity
  • to taste salt and freshly ground black pepper

Method
 

  1. In a large bowl, combine the fresh spinach leaves, toasted walnuts, and blueberries.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, honey, salt, and black pepper to create the dressing.
  3. Pour the dressing over the spinach mixture and toss gently to coat all ingredients evenly.
  4. Sprinkle the crumbled feta cheese over the top and serve immediately.
