  • 1/4 cup red onion thinly sliced
  • 3 tablespoons extra virgin olive oil

Method
 

  1. In a large salad bowl, combine fresh baby spinach, blueberries, and thinly sliced red onion.
  2. Add the chopped walnuts to the salad.
  3. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, sea salt, and black pepper until well combined.
  4. Pour the dressing over the salad and gently toss everything together until evenly coated.
