Ingredients
  

  • 1 cup rolled oats old-fashioned
  • 2 cups water or unsweetened almond milk
  • 1/2 cup fresh blueberries washed
  • 1/4 cup walnuts chopped, toasted if desired
  • 1 teaspoon ground flaxseed optional
  • 1/2 teaspoon cinnamon ground

Method
 

  1. Combine the rolled oats and water in a small pot and bring to a gentle boil over medium heat.
  2. Reduce heat to low and simmer, stirring occasionally, until the oats are soft and have absorbed most of the liquid, about 5 minutes.
  3. Remove from heat, then stir in the blueberries, walnuts, ground flaxseed (if using), and cinnamon.
  4. Divide the oatmeal between two bowls and serve warm.
