Simple Lentil Vegetable Soup
A soft, filling soup that can be served chunky or blended smooth.

- 1/2 cup dry lentils rinsed
- 1 carrot chopped
- 1 cup chopped spinach
- 3 cups low-sodium vegetable or chicken broth
- 1 tablespoon olive oil
- 1/2 teaspoon cumin optional
- Salt and pepper to taste
Add lentils, carrot, broth, and cumin to a pot.
Bring to a boil.
Reduce heat and simmer for about 20–25 minutes, until lentils are soft.
Stir in spinach and olive oil.
Cook for 2 more minutes.
Serve warm.
