Simple Lentil Vegetable Soup

A soft, filling soup that can be served chunky or blended smooth.

Ingredients

  • 1/2 cup dry lentils rinsed
  • 1 carrot chopped
  • 1 cup chopped spinach
  • 3 cups low-sodium vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin optional
  • Salt and pepper to taste

Instructions

  • Add lentils, carrot, broth, and cumin to a pot.
  • Bring to a boil.
  • Reduce heat and simmer for about 20–25 minutes, until lentils are soft.
  • Stir in spinach and olive oil.
  • Cook for 2 more minutes.
  • Serve warm.
