Ingredients

  • 1 cup red lentils rinsed
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 cups low-sodium vegetable broth warm
  • 1 cup chopped fresh spinach soft leafy greens
  • 1/2 cup diced tomatoes canned or fresh
  • 1/2 teaspoon ground turmeric optional for flavor and color

Instructions

  • Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Add rinsed red lentils, diced tomatoes, turmeric, and warm vegetable broth. Stir to combine.
  • Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally, until lentils are very soft.
  • Add chopped spinach and cook for an additional 3-5 minutes until wilted and tender.
  • Season with salt and black pepper to taste. For a smoother texture, gently mash the soup with a spoon or use an immersion blender.
