Ingredients

  • 1/2 cup fresh spinach chopped

  • 1 tablespoon milk or water optional

Method
 

  1. Beat the eggs with milk or water, if using.
  2. Warm olive oil in a small pan over low heat.
  3. Add spinach and cook until softened.
  4. Pour in the eggs.
  5. Stir gently over low heat until softly cooked.
  6. Serve warm.
