Ingredients
  

  • 4 cups fresh baby spinach washed and dried
  • 1/4 cup walnuts chopped, toasted if desired
  • 1/3 cup fresh blueberries rinsed
  • 1 tbsp extra virgin olive oil for dressing
  • 1 tsp fresh lemon juice for dressing
  • 1/4 tsp ground black pepper freshly ground
  • 1/8 tsp sea salt or to taste

Method
 

  1. In a large salad bowl, combine the fresh baby spinach, chopped walnuts, and fresh blueberries.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, sea salt, and ground black pepper until well combined.
  3. Drizzle the dressing over the salad and gently toss to coat all ingredients evenly.
  4. Serve immediately for best freshness and flavor.
