Avocado and Walnut Whole Grain Toast

A simple, nutrient-dense breakfast or snack featuring whole grains, healthy fats, and nuts to support cognitive function and brain health in line with the MIND Diet.

Ingredients

  • 1 slice whole grain bread toasted
  • 1/2 medium ripe avocado peeled and pitted
  • 1 tablespoon chopped walnuts for topping
  • 1/4 teaspoon ground flaxseed optional, for extra omega-3
  • to taste salt and black pepper for seasoning
  • a few drops fresh lemon juice to prevent avocado browning and add flavor

Instructions

  • Toast the whole grain bread slice until golden and crisp.
  • In a small bowl, mash the avocado with fresh lemon juice, salt, and black pepper to taste.
  • Spread the mashed avocado evenly over the toasted bread.
  • Sprinkle chopped walnuts and ground flaxseed on top for added brain-healthy fats and crunch.
  • Serve immediately to enjoy the fresh flavors and textures.
