Herbed Cod with Garlicky Swiss Chard and Quinoa

Ingredients
 
 

  • 4 oz cod fresh or thawed, skinless, boneless
  • 1 tsp olive oil extra virgin for cooking
  • 1/2 tsp oregano or 1 tbsp fresh chopped; dried
  • 1/4 tsp salt adjust to taste
  • 1/4 tsp black pepper freshly ground preferred
  • 1 cup quinoa about 185 g; uncooked, rinsed
  • 2 cups water for cooking quinoa
  • 1 tbsp olive oil extra virgin for chard sauté
  • 2 cloves garlic minced
  • 5 cups Swiss chard washed, chopped; about 150 g
  • 1/4 tsp black pepper for seasoning chard
  • 1 tsp lemon juice freshly squeezed, optional for brightness

Method
 

  1. Rinse quinoa under cold water. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed and quinoa is fluffy. Remove from heat and let stand covered for 5 minutes.
  2. Pat cod dry with paper towels. Rub with 1 teaspoon olive oil, dried oregano, salt, and black pepper. Let sit while preparing other ingredients.
  3. Heat a non-stick skillet over medium heat. Place cod in skillet and cook 3-4 minutes per side, until opaque and flakes easily with a fork.
  4. While cod cooks, heat 1 tablespoon olive oil in another skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped Swiss chard and cook, stirring often, until wilted and tender, about 5 minutes. Season with black pepper and lemon juice.
  5. Divide quinoa among plates. Top with sautéed Swiss chard and herbed cod. Serve warm for a balanced brain-healthy meal.
