Ingredients
  

  • 4 cups kale, chopped Remove thick stems
  • 1 cup sliced cremini mushrooms Fresh preferred
  • 2 cloves garlic Minced
  • 1 tablespoon extra virgin olive oil For sautéing
  • to taste sea salt
  • to taste freshly ground black pepper

Method
 

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.
  3. Add the sliced mushrooms and cook for 3 minutes, stirring occasionally, until they begin to soften.
  4. Add the chopped kale to the skillet, stirring well to combine. Cook for 2 minutes until kale wilts but remains vibrant green. Season with sea salt and freshly ground black pepper to taste.
  5. Remove from heat and serve immediately as a side dish or light snack.

Notes
