Ingredients
  

  • 200 g red lentils rinsed thoroughly before cooking for softness
  • 150 g carrots peeled and diced small for very soft texture
  • 1 cup spinach fresh baby leaves, washed well
  • 1 tbsp olive oil extra virgin for brain health benefits
  • 1 tsp garlic minced finely
  • 500 ml vegetable broth low sodium preferred for heart and brain health
  • 0.5 tsp turmeric ground, adds anti-inflammatory properties
  • 0.25 tsp black pepper freshly ground to enhance turmeric absorption
  • 0.5 tsp sea salt optional; adjust for taste and dietary needs

Method
 

  1. Heat olive oil in a medium pot over medium heat. Add minced garlic and sauté gently for 1 minute until fragrant, careful not to brown.
  2. Add diced carrots and stir for 2 minutes to soften slightly.
  3. Pour in rinsed red lentils and vegetable broth. Stir in turmeric, black pepper, and optional sea salt.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally, until lentils and carrots are very soft.
  5. Stir in fresh spinach leaves and cook for an additional 2 minutes until wilted and tender.
  6. Remove from heat and allow to cool slightly for safer, easier eating. Serve warm.
