Ingredients
- 1 cup red lentils rinsed
- 2 cups water or low-sodium vegetable broth
- 2 medium carrots peeled and diced
- 1 small onion finely chopped
- 1 tbsp olive oil extra virgin
- 1/2 tsp ground cumin optional for mild flavor

Instructions
- Heat olive oil in a pot over medium heat. Add chopped onion and diced carrots, cooking for 5 minutes until softened.
- Add rinsed lentils, water or broth, and ground cumin to the pot. Bring to a boil, then reduce heat and simmer gently for 15 minutes until lentils and carrots are very soft.
- Use an immersion blender or transfer soup in batches to a blender and puree until smooth. Season with salt and pepper to taste.
