Ingredients
  

  • 1 cup red lentils rinsed
  • 2 cups water or low-sodium vegetable broth
  • 2 medium carrots peeled and diced
  • 1 small onion finely chopped
  • 1 tbsp olive oil extra virgin
  • 1/2 tsp ground cumin optional for mild flavor
  • to taste salt and black pepper optional

Method
 

  1. Heat olive oil in a pot over medium heat. Add chopped onion and diced carrots, cooking for 5 minutes until softened.
  2. Add rinsed lentils, water or broth, and ground cumin to the pot. Bring to a boil, then reduce heat and simmer gently for 15 minutes until lentils and carrots are very soft.
  3. Use an immersion blender or transfer soup in batches to a blender and puree until smooth. Season with salt and pepper to taste.

Notes

Caregiver tip: Puree thoroughly to create a smooth texture that is easy to swallow. This soup is nutrient-dense and gentle, combining legumes and vegetables for a nourishing meal.

That can overwhelm anyone looking for help. This site filters out, focuses on and offers only the best information. it has helped hundreds of thousands of people since it debuted in 2007.
