Ingredients
  

  • 4 cups fresh spinach leaves washed and trimmed
  • 1 medium ripe avocado peeled and pitted
  • 1 small yellow onion chopped finely
  • 2 cups low-sodium vegetable broth
  • 1 clove garlic minced
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon ground black pepper or to taste
  • 0.25 teaspoon sea salt or to taste

Method
 

  1. Heat olive oil in a medium pot over medium heat. Add chopped onion and minced garlic and sauté until soft and fragrant, about 5 minutes.
  2. Add the fresh spinach leaves to the pot and cook, stirring frequently, until wilted, about 3 minutes.
  3. Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat and simmer for 7 minutes.
  4. Remove the pot from heat. Add the ripe avocado to the pot. Use an immersion blender to puree the soup until very smooth. Alternatively, carefully transfer soup in batches to a blender and puree.
  5. Season the soup with sea salt and ground black pepper to taste. Stir well and serve warm.

Notes

Caregiver Tip: This soup is easy to swallow and packed with brain-healthy ingredients such as leafy greens and healthy fats from avocado and olive oil. The smooth texture helps older adults who need very soft foods. Preparing it in one pot keeps cleanup simple and the cook time fits within a busy caregiver’s schedule.
