Method
- Heat olive oil in a medium pot over medium heat. Add chopped onion and minced garlic and sauté until soft and fragrant, about 5 minutes.
- Add the fresh spinach leaves to the pot and cook, stirring frequently, until wilted, about 3 minutes.
- Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat and simmer for 7 minutes.
- Remove the pot from heat. Add the ripe avocado to the pot. Use an immersion blender to puree the soup until very smooth. Alternatively, carefully transfer soup in batches to a blender and puree.
- Season the soup with sea salt and ground black pepper to taste. Stir well and serve warm.
