Ingredients
  

  • 4 cups fresh baby spinach washed and dried
  • 1/4 cup walnuts chopped, toasted if preferred
  • 8 cherry tomatoes cherry tomatoes halved
  • 2 tablespoons extra virgin olive oil for dressing
  • 1 tablespoon fresh lemon juice for dressing
  • 1/4 teaspoon ground black pepper freshly ground
  • 1/4 teaspoon sea salt or to taste

Method
 

  1. Place the fresh baby spinach in a large salad bowl.
  2. Add halved cherry tomatoes and chopped walnuts to the bowl.
  3. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, sea salt, and ground black pepper.
  4. Pour the dressing over the salad and toss gently until all ingredients are well coated.
  5. Serve immediately and enjoy a fresh, brain-healthy meal.
