Quick Mediterranean Spinach & Walnut Salad

A fresh and brain-healthy salad combining nutrient-rich spinach, crunchy walnuts, and tangy lemon dressing for a quick, low-energy meal.

Ingredients

  • 4 cups fresh baby spinach leaves washed and dried
  • 1 oz walnuts roughly chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice about half a lemon
  • 0.25 tsp sea salt or to taste
  • 0.125 tsp black pepper freshly ground

Instructions

  • Place fresh baby spinach leaves in a large salad bowl.
  • Sprinkle roughly chopped walnuts over the spinach.
  • In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, sea salt, and black pepper.
  • Pour the dressing over the spinach and walnuts, then toss gently to coat evenly.
  • Serve immediately as a fresh, light salad.

Notes
