Ingredients
- 2 medium sweet potatoes peeled and chopped
- 1 clove garlic minced
- 1 cup fresh spinach washed and chopped
- 1 tbsp olive oil extra virgin
- 2 tbsp milk low-fat or plant-based

Instructions
- Place chopped sweet potatoes in a pot and cover with water. Bring to a boil, then simmer for about 15 minutes until very tender.
- While potatoes cook, heat olive oil in a pan over medium heat. Add minced garlic and cook for 1 minute. Add chopped spinach and cook until wilted, about 2-3 minutes.
- Drain sweet potatoes and mash with milk until smooth. Fold in sautéed spinach and garlic mixture. Season with salt and pepper as desired.
